One of the first desserts that I learned to bake and loved was baked yoghurt. Although it is a very simple recipe with just three ingredients- Cream, condensed milk and yoghurt, it has become one of my favourite recipes to bake and eat mainly because of its simplicity. The irony is that I don't like sweets, but I enjoy preparing them, and this happens to be one of the very few desserts I crave for. Many times, after dinner, even though everyone is stuffed, they still have a bowl full of baked yoghurt because they loved it so much and seeing them enjoy the food I bake instantly brightens my day.
So, when I arrived in Toronto from Mumbai, I HAD to prepare the baked yoghurt! I went to a local store and while looking for the ingredients, I came across many creams with varying fat percentages. Back in India, we only find fresh cream (cooking cream), heavy cream, whipping cream, and a few other sorts of dairy products, so seeing so many creams confused me. After a short Google search, I purchased the 35% fat cream and baked the dish at home. The final dish became much richer and creamier than it used to be when I made it in India, where the texture was similar to a baked cheesecake, but here in Toronto it was as creamy as a no bake cheesecake due to the quality change in each of the three products. Nonetheless, my friends and I thoroughly enjoyed the baked yoghurt and devoured it in one sitting. To be honest, I liked this one a lot better than what I'd make in India!
Last September, I had the opportunity to conduct a workshop for about 80-85 people for which I shared my recipes and taught them how to bake them. Of course, I had to include the baked yoghurt as one of the recipes, so I documented the entire baking process in a video that I am excited to share with you as well!

Yoghurt - 200 ml
Condensed Milk - 200 ml
Vanilla Essence (optional) - 5 ml
Crushed Biscuits - 15 nos
Melted Butter - 30 gms
3. Pour this wet mix on the biscuit base (optional)/ tin and put the tin in a water bath*.
4. Bake this in a preheated oven at 170° C for 30 mins.
5. You can enjoy this either warm or cold!

Wow, I don't eat sugar or flour anymore but I believe that would be totally delicious! Being in the baking and pastry program would be sooooo fun!
